This is a really great stuffing on it's own
and even better with duck

Serves : 4 - 6
2 2-1/2 pound Wild Ducks
4 cups soft (fresh) Bread Crumbs
1 cup Celery, finely chopped
1 cup Onion, finely chopped
1 cup Seedless Raisins, golden (preferred) or dark
1 cup Pecans, chopped
1-2 Tablespoons #116 Heritage Salt-Free seasoning, divided
1/2 cup Milk, scalded
2 Eggs, slightly beaten
Butter
Preheat oven to 350ºF. Mix bread crumbs, celery, onions, raisins, pecans and 1 tablespoon #116 Heritage Salt-Free seasoning together. Add hot milk to beaten eggs (contantly stirring), then add to breadcrumb mixture. Mix lightly but well. Fill duck cavities lightly with stuffing. Close cavity. Rub butter generously over birds and sprinkle with additional #116 Heritage Salt-Free seasoning. Place on rack in roasting pan. Bake about 50 to 60 minutes, basting often with drippings.
