2-1/2 pounds Turkey Breast, fresh
2 teaspoons Unsalted Butter or Olive Oil
2 Tablespoons #106 Gusto Salt-Free seasoning, divided
3/4 cup Onion, minced
1/4 cup Green Onion, chopped finely
1/2 cup Celery, minced
1/2 cup Red Bell Pepper, minced
3 Tablespoons Unsalted Butter, or great Olive Oil
6 slices cracked wheat bread, cubed
1 can sliced Black Olives, drained (4-1/2 ounces)
3/4 cup Dry White Wine (Chablis or other)
1/4 cup Water
2 Tablespoons Fresh Parsley, chopped
1 Tablespoons #117 Bravado Salt-Free seasoning (optional)
Rinse and pat turkey breast dry (paper towels). Rub butter on turkey skin. Sprinkle with 1 Tbsp. Gusto. Set aside. Sauté onion, green onion, celery, red bell pepper in butter until soft. Stir in bread cubes, olives, wine, water, parsley, 1 Tbsp. Each Gusto and Bravado. Make a mound of the stuffing in baking dish. Place turkey breast on top. Bake at 375ºF for 1-1/4 to 1-1/2 hours, or until juice runs clear from the breast when pricked with a fork.
